What does induction mean? What does induction mean?
Induction technology uses magnetism to create heat in the base of a pot rather than in a cooking element below the cooktop surface.

This is a safer cooking system as the only heat in the cooktop surface is the transfer heat back from the pan. The cooktop surface remains cooler and easier to clean as spill overs will not char on the surface.
