Potatoes, although a staple of many winter meals, can often fall into the background of our dishes. Stokehouse Executive chef and Electrolux Ambassador, Richard Ousby, encourages us to experiment with potatoes, highlighting the versatility of the vegetable. See his tips on how to create standout potatoes in three different ways.

1. What are your top tips to create the creamiest mash?

Butter, butter and more butter!

2. What are your top tips to the crispiest roast potatoes?

I always use rendered fat, simply because it tastes better and you get it for free on whatever meat you’re buying!

3. What are your top tips to mastering hasselback potatoes?

When cutting the potato, place two thin wooden spoons on either side, then cut down to the handles – you’ll never cut through the potato.

As many potatoes you wish to serve

  1. Pre-heat the oven to 180C
  2. Bake the potatoes (approx. 50-60 minutes)
  3. Once the potatoes are hot, skin them and push them through a sieve
  4. Heat your butter and milk
  5. Soak the potatoes in warm butter and milk
  6. Put them back in a warm flame and work in more room temperature butter until they are rich & silky

Note: If you want them softer, add more warm milk.

As many potatoes you wish to serve
A pinch of salt
A pot of water – water level needs to be 3 to 4cm above the tops of the potatoes
Rendered fat or oil

  1. Boil a pot of salted water
  2. Add the potatoes and boil until they are almost breaking apart
  3. Remove the potatoes from the water and either leave them to chill in the fridge overnight or wait until they reach room temperature
  4. Add rendered fat or oil to a pan and place on medium heat
  5. Add the potatoes to the pan and do not move until they are beautifully golden
  6. Once golden, turn the potatoes until the other side is also golden
  7. Add butter to the pan and turn the potatoes for a third time
  8. Once fully golden, add a pinch of salt and serve immediately!

Note: Cooking time also includes chilling potatoes overnight.

As many potatoes you wish to serve
2x thin wooden spoons
Enough butter to cover the potatoes
A large pinch of salt
Toppings of your choice

  1. Preheat the oven to 180C
  2. Place two thin wooden spoons either side of the potato
  3. Thinly slice the potato down to the wooden handles
  4. Repeat for the rest of your potatoes
  5. Rub the sliced potatoes with butter and salt
  6. Place potatoes in the oven and bake until crispy
  7. Remove potatoes from the oven and add the toppings of your choice! E.g grill with guanciale or get creative with crème fraiche and fresh spring onions!
