     This year the crown for Best in Taste was awarded to Bouche on Bridge for their wallaby skewers with spiced cashew sauce. Runner up, Mercado also captured hearts with their hazelnut mousse cake.

    Adventurous visitors could sample the Pambula Sea Urchin Crumpet – the masterwork of Josh Niland from seafood restaurant, Saint Peter.

    Talking about the inspiration behind his dish, Josh said, “As a kid eating toasted crumpets with honey and butter in the morning was always something that I really looked forward to. Without being too nostalgic, this memory prompted the thought that we use sea urchin (the butter of the sea) to put onto a wonderfully crisp airy crumpet.”

  • Electrolux Taste Theatre

    The Electrolux Taste Theatre was bursting with young gun chef talent this year. 

    The Appetite for Excellence Cook Off saw Richard Ousby (Stokehouse Group) and Josh Niland (Saint Peter) go dish-to-dish as they competed in an intense mystery box challenge, where the audience got to choose their ingredients. After the audience chose ‘cobia’ as the hero ingredient, the chefs whipped up a cobia spring roll (Richard Ousby) and fish and bits; Josh Niland’s signature fish offal dish.

    After tasting the dishes and grilling the chefs on their techniques, the audience and judge, Lyndey Milan, crowned Josh the winner.

  • Electrolux Chef Secrets

    An impressive line-up of chefs cooked and dined with guests at Electrolux Chefs’ Secrets including Massimo Mele (Electrolux Ambassador), Scott Pickett (Estelle Bistro), Josh Niland (Saint Peter), Nelly Robinson (nel. Resaurant), Nathan Sasi (Mercado) and Jason Brown (nel. Restaurant).

    From ‘Tasmanian octopus scotch eggs’ to ‘Handmade Ferretti pasta with prawns’, guests learnt how to cook the chefs’ signature dishes and learnt expert cooking tips and tricks along the way.

    Nelly’s awe-inspiring dish of spanner crab with macadamia, mint and tomato water was an Instagram favourite!
