Despite the potato’s reputation of being unhealthy, it is actually not as bad as most people think. They are packed with B6, antioxidants that fight free radicals, and also contains more potassium than bananas, which helps maintain your blood pressure. The best way to keep all the nutrients is to avoid the deep fryer, and bake them with the skin on.

Recipe

Hash brown mix:
5 medium russet potatoes, shredded
1 medium onion, finely chopped
1 dl all-purpose flour
2 eggs
salt and pepper
12 pieces of bacon
12 eggs
  1. Grate the potatoes roughly and then rinse until the water is clear. Squeeze dry.
  2. Mix the potato shreds with the onion, eggs and flour until its evenly distributed.
  3. Spray the muffin tray with non-stick baking spray.
  4. Take about 2 table spoons of the mix in each of the molds and press it out evenly on the bottom and edged, creating a shape of a pie shell.
  5. Bake at 200°C for 15 min until slightly golden, add a pinch of shredded cheese and a slice of cooked bacon around the rim.
  6. Crack an egg in the middle of the mold and bake again at 200°C for 5-7 minutes.
  7. Top with salt and pepper
