Ingredients
Roasted Lamb
- 2kg leg of lamb or supermarket pre marinated roast
- 1/4 cup olive oil
- 1 tablespoon chopped fresh rosemary leaves
- 2 garlic cloves, crushed
Lemon roasted Potatoes
- 6 washed Medium Size Potatoes
- Keens curry powder
- 1 lemon
- 2 tbs Olive Oil
- Italian herbs seasoning
- Salt and Pepper
Method
Roasted Lamb
- Preheat oven to 180˚C
- Place lamb on rack or pan.
- Combine oil, rosemary and garlic in a bowl.
- Rub half the oil mixture over lamb.
- Season with salt and pepper.
- Place in oven, General rule is 55 mins per 500g
- Once cooked let rest for 10 mins
- Slice and serve with desired sides.
Lemon roasted Potatoes
- Preheat the oven to 220˚C
- Cut the potatoes into wedges and place into a large mixing bowl.
- Sprinkle in curry powder to taste
- Sprinkle in italian seasoning to taste
- Pour over the olive oil
- Season with salt and pepper
- Squeeze in lemon juice
- Toss potatoes around ensuring all are well coated in the flavouring
- Place on wire rack with the narrow tips pointing up
- Drizzle over any remaining flavouring juices
- Place in hot oven for about 45 mins until they are crispy on the tips but fluffy on the inside
