Ingredients
- 2 large lobster tails
- 10 mini brioche buns
- Zest and juice from 1 lemon
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- ¼ red onion finely diced
- ⅓ cup Kewpie Mayo
- Salt to taste
- Micro Herbs (optional)
Method
- Preheat the Electrolux Steam Oven at 140 degrees Celsius on the steam cooking setting.
- Place your lobster tails onto a pre lined baking tray and steam for 10 minutes or until they have reached an internal temperature of 165 degrees Celsius. Take out of the oven and leave to slightly cool.
- Remove the meat from the shell by cutting down the middle of the tail with a sharp knife and separating the flesh from the shell with your fingers. Cut the lobster meat into bite sized pieces.
- In a large mixing bowl, mix together the lobster meat with the remaining ingredients. Give it a bit of a taste to check it is seasoned to your liking.
- When you are ready to serve your rolls, preheat the Electrolux Steam Oven at 140 degrees Celsius on the steam cooking setting. Cut your brioche buns in half and place onto a pre lined baking tray. Steam for 10 minutes.
- Take the buns out of the oven and assemble your lobster rolls. Finish off with a sprinkling of micro herbs and enjoy!
